A graduate of the Culinary Institute of America, Chef Gerard's career includes an apprenticeship at the Forbes 4-star Greenbrier Hotel. After working at the Inn at Dos Brisas & Four Seasons Hotel in Houston, he moved to Austin in 2015 and joined New Waterloo as Executive Sous Chef of La Condesa & then Executive Chef of Le Politique. He then went on to lead the team at the AT&T conference center as Executive Sous Chef before being named Executive Chef at Second Bar + Kitchen late 2021.
